My Weekend



It was a busy and COLD weekend. There weren't many good photos to choose from this weekend because I was at a photo shoot with my my band all day on Saturday. Unfortunately, the top three were taken with my phone since I didn't bring my real camera. I had quite the do' that day. Hopefully I'll be able to share more photos from that in the near future.

Sunday was a beautiful, sunny day. As the boyfriend watched football, I made some things for my shop and baked some banana nut muffins. Hope you all had a wonderful weekend!

Pumpkin Bread


Last night I made my Moms famous pumpkin bread. I had quite the sweet tooth so I added a little bit of Haagen Daaz Vanilla Ice cream on top. So good.
Here's the recipe:
3 cups sugar
1 cup vegetable oil
4 eggs lightly beaten
16oz. pumpkin
3 1/2 cups flour
2 tspn salt
2 tspn baking soda
1 tsp baking powder
1 tsp nutmeg, allspice, cinnamon
1/2 tsp cloves
2/3 cup of water

Preheat oven to 350 degrees. Butter and flour 2 9x5 loaf pans. Stir sugar, oil, eggs and pumpkin together in a large bowl. Combine all dry ingredients in separate large bowl. Combine both bowls and add water. Divide into 2 pans. Bake for 30 to 40 minutes until done. Let stand for 10 minutes and remove from pan.

Happy St Patricks Day!

Irish Soda Bread
5 cups sifted all-purpose unbleached flour
3/4 cup sugar

2 teaspoons baking powder
1 1/2 teaspoons salt
1 teaspoon baking soda
1/4 pound (1 stick) butter
2 1/2 cups mixed light and dark raisins

3 tablespoons caraway seeds
2 1/2 cups buttermilk
1 large egg, slightly beaten

Preheat the oven to 350 degrees F. Generously butter 2 (9 by 5-inch) bread pans. Stir together the sift
ed flour, sugar, baking powder, salt, and baking soda. Cut in the butter and mix very thoroughly with your hands until it gets grainy. Stir in raisins and caraway seeds. Add the buttermilk and egg to the flour mixture. Stir until well moistened. Shape dough into 2 loaves and place in the pans. Bake for 1 hour. Test with a toothpick for doneness. Cool in the pans for 3 to 5 minutes. Transfer to a wire rack to cool.
